In order to enhance the enjoyment of eating salmon dishes from around the world, we brew Salmon de Shu, a blended sake recommended for dishes such as sushi, sashimi, salt-grilled salmon, carpaccio, meuniere, and smoked salmon, washing away any fishy smell and bringing out the umami flavour of salmon, crafted with the intention of complementing the annual upstream migration of salmon in the Naka River alongside our brewery in Shimotsu district where each household traditionally exchanges one salmon each fall, using a blend of various junmai sakes for high acidity and amino acids to fully savour the deliciousness of salmon, finishing with a taste that cleanses the salmon's fat. |
